Everyday Cookies

Yield: 4-6 dozen (depending how big you make them)

1/2 cup butter, room temperature
1/2 cup canola oil
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1-3/4 cups flour or for gluten free*, see below
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup rice krispies cereal
1/2 cup oatmeal
1/2 cup coconut
1/2 cup chopped pecans

Cream together butter, oil and sugars. Add eggs and vanilla and beat well.

In a separate bowl, whisk together flour(s), salt, soda, and cream of tartar. Add to sugar mixture. Mix well. Stir in remaining ingredients.

Drop by teaspoonfuls onto ungreased cookie sheet (or use parchment - you can almost never go wrong using parchment). Flatten slightly. Bake at 375F (400F for small cookies) for 10-12 minutes, rotating trays once, until lightly browned. Remove from cookie sheets and cool.

*For gluten free cookies, substitue for wheat flour:
2/3 cup sorghum flour
2/3 cup oat flour
2/3 cup arrowroot starch
1 teaspoon xanthan gum

This is a pretty old recipe, from maybe the 1970s? Maybe older. Nowadays the only people who make cookies every day are professional bakers! :-)
