Flourless Almond Butter Cookies

2 cups creamy almond butter, room temperature
2/3 cup honey
2 eggs
2 teaspoons soda
1/2 teaspoon salt
1/2 teaspoon vanilla

Preheat oven to 350F. Line two baking sheets with parchment paper.

Add all of the ingredients to a large mixing bowl and mix together on medium-high with a hand mixer for 60-90 seconds, or until the mixture comes together like a thick dough. It should be very thick and sticky.

Scoop out walnut size balls of dough using 2 silicone spatulas. Place 2" apart on parchment and flatten slightly.

Bake 10-11 minutes, until lightly browned but not too dark on the bottoms. They will puff up while baking and then flatten again. Take them out of the oven before they've flattened completely.

Makes about 7-1/2 dozen small ones


As I get older, overly sweet things don't fit my palate anymore. These are a mildly sweet cookie, about as healthy as you can get and still be a cookie! And gluten free.
