Red Lentil Curry Soup

1/4 c coconut oil
4 celery ribs, cut into 1/2" squares
1 carrot, sliced
1 red bell pepper, chopped
2 onions, chopped
2 garlic cloves, minced
6 c water
6 c vegetable broth or bone broth
2 c red lentils
1/4 c brown rice
1/2 t curry powder
1/2 t ground cumin
1 T lemon pepper
1 t pepper
garlic salt, to taste
1 T fresh lemon juice

In a large soup pot, heat the coconut oil. Saute veggies for about 5 minutes.

Add water and broth. Stir in lentils and rice. Cover and bring to a boil. Reduce heat and simmer, stirring occasionally, about 25 minutes.

Stir in spices. Simmer uncovered about 20 minutes, or until lentils fall apart and mixture thickens.

Stir in lemon juice.

Vegan and gluten free

But if you have a carnivore in your house, as I do, you can add a pound or two of chicken, cut into bite size pieces.
